Vanilla Cupcake with hearth-shaped jelly for Mothers’ Day

There’s nothing sweeter than the love of and for a mother, and today it’s the right time to celebrate this love and surprise your mom with sweet, moist and tasty vanilla cupcakes.

What’s special about these cupcakes is the toppings, in fact today we will learn how to prepare homemade hearth-shaped jellies to decorate this special gift for Mother’s Day.

Ingredients for the batter:

  • 10 oz of all-purpose flour
  • 1 tablespoon of baking powder
  • ½ teaspoon of salt
  • 4 oz of unsalted, softened butter
  • 6 oz of sugar
  • 2 eggs
  • 2 teaspoon vanilla extract
  • 4 oz buttermilk

Ingredients for the jelly:

  • 10 oz fruit juice (whichever flavor you like)
  • 1 oz of gelatin
  • 17 oz cups sugar
  • 17 oz fruit preserves or jam (whichever flavor you like)

Preparation for the cupcakes batter:

  1. Preheat your oven to 350° F and start combining in a medium bowl all the dry ingredients except for the sugar (flour, baking powder, salt). Set aside the flour mix.
  2. Beat butter and sugar with an electric mixer (medium-high speed) for about 5 minutes, until thick and fluffy.
  3. o the butter and sugar mix, start adding one egg at a time, beating well in between. Add the vanilla extract and combine.
  4. Reducing the mixer’s speed, start adding a bit of flour, alternating it with the buttermilk. Careful not to over-beat!
  5. Pour the cupcake butter in 12 baking cups, filling 2/3 full.
  6. Bake the cupcakes for 20/25 minutes until well cooked. TIPS: insert a toothpick in one cupcake, if the toothpick comes out clean, the cupcakes are ready!

Preparation for the fruit jellies:

  1. Place 2/3 of the juice in a bowl, sprinkle with the gelatin, and let it sit for 5 minutes. In a separate bowl, combine the remaining juice and 1 ½ cup of the sugar.
  2. Bring the juice and sugar mix to a boil, stirring until the sugar dissolves. Add the preserves and whisk to combine. Return to a boil and cook until thick and syrupy.
  3. Add the gelatin mixture and whisk until the gelatin dissolves. Pour the combined mixture through a fine mesh, sieve into a silicone heart-shaped mold and refrigerate 3 hours.
  4. When the jellies are ready, pour them into a bowl and coat them with the remaining sugar.

Now that the jellies are ready, you can decorate your cupcakes for Mother’s Day.
